The "Hitsuji no Mori Red Meat Tasting Course" was created to meet the desires of such meat lovers.
This course does not contain any hormones and focuses solely on pure red meat.
We have prepared a full course of lamb, combining seven carefully selected cuts of lamb with different flavors, textures, and aromas, with the unique "aged salt-cured" method used by Sapporo meat artisans, and Hokkaido's Jingisukan culture.

The course begins with two signature cuts of meat, which have been cured with salt, a method that is synonymous with our restaurant.Enjoy the "artisan's work" that removes excess moisture and concentrates the flavor.
